It's a refreshing take on ramen – much more light and refreshing than the usual creamy tonkotsu broth, but still rich with flavor from the truffle sauce. I've had countless bowls of ramen when I lived in Japan and LA, but this spot was better than what I had expected from New York and remains one of my favorites in the world!
